Quinoa, Oat and peanut butter cookies

After Christmas we’re all trying to lose weight … At least I am after all my Christmas baking. So I tested out some recipes that still fixed my sweet tooth but didn’t have the large amount of flour and sugar. I ended up with these yummy cookies with its main ingredients being quinoa, oats and sugar free peanut butter- and they were delicious! Message for recipe !

      1 cup (250 mL) peanut butter
      1/2 cup (250 mL) packed brown sugar
      1 egg
      2 tsp (5 mL) vanilla
      1 tsp baking powder
      1 tsp (5 mL) baking soda
      1/2 tsp (2 mL) salt
      2 cups (375 mL) rolled oats, not instant
      1 cup (250 mL) cooked quinoa

      Combine all dry and all wet in separate bowls and then slowly combine. Bake at 350 8-11 minutes or until golden brown. They will be slightly soft but will firm up once they sit. Store in air tight container in cool dark place overnight. Refrigerate for any longer – not sure about leaving quinoa out to get warm and gather moisture.
